Trends in fruit and vegetable consumption among adults in the United States indicate a gradual decline in recent years. According to recent federal studies, an estimated 45% of people don't consume any fruit or juice, and 22% don't eat any vegetables. In fact, less than 10% of people consume the recommended five to nine servings of fruits and vegetables. As a result, among the many nutrients our diet lacks is vitamin C, a vital nutrient in our health maintenance and performance. Vitamin C is important for the production of collagen, a protein that forms the basis of connective tissues such as bones, teeth and cartilage. Cartilage helps form a protective barrier against infection and disease, plus it promotes the healing of wounds and bruises. This alone makes vitamin C an extremely important nutrient. Studies indicate that populations with long-term consumption of higher than the recommended dietary allowance (RDA) levels of vitamin C have better indices of health. Our body is constantly vulnerable to the damaging effects of stress from environmental influences and deficient diet. Vitamin C is the preeminent antioxidant in the body's defenses to cope with free radicals and oxidative stress.
This fundamentally important vitamin interacts with several other nutrients in an intricate way. Since we neither make vitamin C in our body nor store it to an appreciable extent, we must obtain this indispensable nutrient from our daily diet. Good food sources of vitamin C in our diet include oranges, grapefruit, papaya, red pepper and broccoli. Citrus juices are also good sources of vitamin C but often contain excess sugar that is instantly absorbed by the body. Regardless, most of us don't eat enough fruits and vegetables every day, so we need help receiving the right amount of vitamin C.
Even if we eat the recommended amount of fruits and vegetables each day, cooking them can reduce their vitamin C concentration significantly. Many studies support daily intake of vitamin C higher than the RDA, which is 60 mg. There are several specific circumstances that require an even greater need for vitamin C. Some studies have shown that vitamin C intake should be increased during periods of illness. vitamin C helps boost our immunity by increasing the production of white blood cells. It has also been shown to help the immune system recover from exposure to toxic substances. Smokers and tobacco users have been shown to need an increased vitamin C intake. Increasing vitamin C intake may also improve blood sugar regulation in diabetics.
